patty
Jennyc, I love making steamed chicken. Instead of baking it, seasoned it with salt put it in a glass (pyrex) bowl then place it in a pot of water (covered) and let it steamed in medium then to low heat until cooked. Once cooled, i hand shredded the chicken meat. It can be used to make sandwiched, put it in soup, make burritos or just enjoyed it plain. The juice of the chicken can be used as soup stock. Our family like beans. Here is a super easy bean soup recipes. I saved the water that i used to cook white beans to make soup. I cook the beans with a couple of dried basil leaves and onion, so both the beans & water is tasty. Add potatoe, beans and other vegetable you like and cook them till soft (about 15-20 minutes), then seasoned with salt & pepper. You may want to add some vegetable or chicken stock for additional flavor. Another super easy soup stock using lean pork & chicken breast / thigh. Add 2/3 slices of ginger, about 1:1 (in oz) of lean pork loin and chicken to water. Use medium high heat to bring it to broil then simmer in med low heat for about 20-30 minutes. Then add your favorite vegetables to the stock, cook until tender, then add salt, pepper & minced garlic to taste. It is a delicious clear broth. The pork is tough & dry but you can eat the chicken.
