Mac & Cheese With Follow Your Heart Cheese

Does anyone have a good recipe for mac & cheese that uses the Follow Your Heart brand of soy cheese? If so, I'd love it if you could share it with me.

Hi Faith,

 

I have 3 weeks and 4 days left until my due date, but I say he could come anytime between 4 days to 5 weeks and 4 days from now. So we will see when he decides to come. Everything is going well. My blood pressure is normal, his heart beat is good, and he's moving. I had a breech worry a few weeks back, but at my last appt. they said they were 95% sure he was back to a head down position. I've put on about 24 pounds. I've had some comments this week that people think my baby has dropped, and I've wondered the same thing but am not really sure myself. I finish school and work this week and then I'll be taking the summer off.

 

I've had some normal cravings for me, but I'm not craving mac & cheese. However, I'd really like to make some mac & cheese to put in my freezer for postpartum. I have already cooked & froze about 2 weeks worth of reheatable meals for postpartum, but they consist mostly of chicken, hamburger, steak, turkey, spaghetti, and pizza. I also have stocked canned veggies and dairy free milks. I'm going to make some bread and desserts to freeze this week. I'll pick up some fresh fruits & veggies on the way home from the birth center. However, I'd really love to have mac & cheese or a casserole in the freezer for some meals also. I've been very busy nesting away (not just cooking, but cleaning, organizing, and preparing things for the baby). It's a wonder I've had time to complete my homework, but I have and haven't turned in any late assignments or missed any classes.

Glad to hear everything is going so well, Carolyn. Man, you are one "together" chick! :) I was way older than you having my son and I was a crybaby all the way. My doctor thought he was positioned too (even tho I didn't think so) and it turned out he was breech afterall, so if any doubts, pay attention to where the kicks come from, mine were way low so we knew the feet were still down....24 pounds, very good! same it was for me, I was little too, although now 10 years later, I have more than half of that creep up on me :angry:, but heck I'm in my forties, it has to happen some time I guess!

 

Have you managed to figure out about the vaccines? May I ask what you will do concerning that? I have to be prepared for my son's booster shots coming, and I'm a little confused on how to proceed.

Hi Faith,

 

We won't be doing vaccines. I'll be refusing the vitamin k short & hepatitis b shot at the birth center. I was going to take alfalfa supplements my last 4 weeks of pregnancy to increase my vitamin k supply in my breast milk. However, I haven't started them yet because I'm a little nervous about taking them I guess. I guess I should probably start those soon though. I ordered special oral vitamin k that doesn't have the bad crap in it that I will use if certain risk factors develop, but if they don't there won't be any extra vitamin k. Hepatitis B doesn't worry me for an infant (atleast with my baby it doesn't).

 

I may eventually get my baby a tetanus shot when he's a toddler, but probably won't because I've read that tetanus is pretty much non-existent with good care of wounds. I've considered exposing my child to chicken pox through a chicken pox party or something when he's older, but my dad said that since kids are getting shots for chicken pox that maybe my child won't even get the chicken pox since he may never even be exposed to it. So we'll have to see on that one. Polio is pretty much non-existent. Basically, I don't plan on doing vaccines. I have chosen a family doctor for my son that won't hassle me about refusing shots because as he says it's my decision since I'm the parent. He has not vaccinated his youngest son except for the tetanus shot. I plan on filling out a religious exemption for the day-care, and hopefully I won't get hassled from them.

 

I have found a few books that have been very helpful in making my decision about vaccines.

*Vaccinations A Thoughtful Parents Guide by Aviva Jill Roomm, The Vaccine Book by Robert W. Sears, and How To Raise A Healthy Child In Spite of Your Doctor by Roberts Mendelsohn all give you a lot of information about vaccines & vaccine preventable diseases

*Naturally Healthy Babies and Children by Aviva Jill Romm and Smart Medicine for a Healthier Child both give you a lot of information about what to do if your child comes down with a vaccine preventable disease.
