Guest Posted July 6, 2006 Report Posted July 6, 2006 ad_ccl, I was wondering if you could share what your recipe/mix for the bread machine without the gluten/dairy is? You can pm me if you want to share it that way instead. Thanks, Carolyn
ad_ccl Posted July 7, 2006 Report Posted July 7, 2006 Hi carloyn, I had a lot of trouble with the bread - as I had to make it soy free, dairy free, egg free, wheat free. Ultimately I started with a recipe and kept changing it until something edible came out - it took a lot of attempts. The bread I made had to be eaten immediately - even a couple hours later it was awful, and it did not freeze well. I don't make it anymore as my son is eating some regular bread - without dairy. I could dig out the recipe if you want, but if you can eat soy and eggs then you could probably find a much better recipe. If your issue is just the casein, you could substitute with goats milk ( which is what we did) or soy, many breads are just made with water as the main liquid, and soy powder. Let me know if you want me to give you the recipe that we used for a while. I could send it later today. The pizza dough that I made was actually not too bad - again it did not freeze well at all and had to be eaten right away. I have found that with most baking I do gluten free - luckily the kids like it and they go through a batch of cookies or muffins before they start tasting bad.
Guest Posted July 8, 2006 Report Posted July 8, 2006 I have some gluten free bread recipes for the bread machine. I'll try one of those & see how it turns out. Do you have a preference on gluten free flours? I can't stand rice flour so that's out of the question right now. Carolyn
