Sorry I couldn't find the old snacks thread--way too buried. 1 T butter 2 tsp vanilla ½ c xylitol 1 tsp cinnamon 2 Cups pecans Melt butter in pan, add other ingredients, adding pecans last. Sugar will ‘melt’ and coat pecans. Stir until pecans are covered well and pour out onto plate with waxed paper. Cool. Great snack and xylitol is considered ‘natural’ (unlike nutrasweet and sucralose), yet is not derived from corn like sorbitol and maltitol. It is a sugar alcohol and is slowly absorbed and supposedly okay if you have yeast overgrowth. FYI, studies have shown that chewing xylitol gum reduces cavities in kids. I use regular natural sugar in mine but would like to try it with the xylitol. Do you get it at a regular grocery store of do you have to go to a health food store? Thanks Gina ps/ I Put these pecans in a salad of lettuce, mandarin oranges, feta cheese and use poppyseed dressing. It is always a hit where ever I bring it. I am experimenting with erythritol also. Less sweet, but no stomach upset that you can get with too much sugar alcohol. Great idea for a salad! I am trying to figure out the recipe for that pear, glazed walnut, some kind of cheese salad, but I need to know the cheese (feta?) and the greens and the dressing. You wouldn't know would you? My daughter loves the maple syrup, preserves and gum. http://www.xylitolstore.com/xylitolstory.htm I believe the salad you are referring to is one I make all the time. It is usually made with spinach, feta or gorgonzola and a raspberry vinagerette. Dried cranberries are nice as well if you don't use pears.
