I need help with this recipe

Its Bette Hagmans All Purpose Flour Substitute

 

2 parts White Rice Flour

2/3 part potato startch

1/3 Tapioca Flour

 

Can someone please break this down in real cooking measurements for me, I have no cluse what Im doing and this stuff is too expensive to screw up!!

 

Also, has anyone tried this? Does it work well?

For those challenged by kitchen mathematics, (I'm one of you!), here is the breakdown. To make 3 cups Four Flour Mix:

2/3 cup Garfava Bean Flour

1/3 cup Sorghum Flour

1 cup Cornstarch

1 cup Tapioca Flour

I find this mix to be a good substitute for all-purpose flour - with the addition of one teaspoon of xanthan gum to help bind the ingredients.

 

Preparation time: 15 minutes

cooking time: 15 minutes

makes: 8 large or 12 medium scones

OOPS! SORRY I thought those were your ingredients.

Try this:

 

Wheat Flour Substitutions

per cup Grain (Flour)

Amount

 

Barley 1-1/4 cups

 

Cornmeal 1 cup

Corn flour 1 cup

Oat 1-1/3 cups

Potato 3/4 cup

Rice 3/4 cup

Rye 1-1/3 cups

Soy 1-1/3 cups

Tapioca 1 cup

 

 

 

or maybe this?

 

2 cups rice or millet flour

2/3 cup potato starch

1/3 cup tapioca flour

1-2 tsp. of xanthan gum

If those are the ratios needed, I would think that you could just use:

2 cups white rice flour

2/3 cups potato starch

1/3 cup tapioca flour

 

This would make 3 cups flours.

 

Hope I answered the question :blink: I would think as long as you stuck to that ratio you could double or triple the amounts easily.

Thank you so much....I do have a big issue though. The recipe has nutritional information and says that the mixture has 4089 calories in it. A loaf of bread uses ALL of that mixture so OH MY LORD ALMIGHTY, our loaf of bread is going to be 5000+ calories??? 500 calories a slice??? There has got to be something very very wrong...do you think they left out a decimal point???
